Description |
Cow's milk contains 87 percent water and 13 percent solids. The solids consists of fat, lactose, minerals and proteins. Casein is the major component of cow's milk protein, and casein itself has several varieties, 30-35 percent is beta-casein. Beta-Casein in turn has several variants, the most common variants of beta-casein are A1 and A2. Cow's milk that contains A2 Beta-Casein is thought to have health benefits. A DNA test is available to identify cows as A2/A2 producing only A2 milk, A1/A1 producing only A1 milk or A1/A2 producing milk containing equal amounts of A1 and A2 beta-casein. Breeding A2/A2 to A2/A2 ensures that all offspring are A2/A2.
